The corn in your breakfast cereal was genetically modified by Monsanto and if there’s no corn in it, is there any high fructose corn syrup in it for sweetness? The true toxicity of GM foods remains unknown, but it’s almost impossible to avoid them. The price of gas is climbing ever higher making it more costly just to go to the store to buy groceries. Meanwhile weather and climate changes due to global warming are destroying crops. Food prices are expected to rise by 15 percent this year here in the US, but some crops have already risen by 50 or 60 percent, forcing more people into poverty. According to the UN 44 million people around the world have been pushed into poverty since last June because of rising food prices.

Here in the US, big business has responded with typical cynicism, packages remain the same size but they hold less product, does anyone remember a pound can of coffee? The pound of coffee became 12 ounces long ago. According to the New York Times, a can of Chicken of the Sea albacore tuna now holds five ounces instead of six and costs more. Bags of Doritos, Tostitos and Fritos contain 20 percent less product than in 2009. Canned vegetable have shrunk from 16 ounces down to as low as 11 ounces and even Noxzema comes in a jar with a false bottom so you get less product and more jar. Have you bought a box of breakfast cereal recently? A large box of cereal, depending on brand, has already topped $5.00; this is an expensive way to start the day! Measured by the pound, breakfast cereals cost as much or more than good cuts of meat. Do you do the grocery shopping for your family? If so, do you think your family is suddenly eating more? Or have you noticed that the packages have shrunken? According to business you’re simply too stupid to notice that food packages are smaller than ever.

There is at least one area where you can make a dent in your purchases. If you have a little time to spend in the kitchen you can make your own cereals. Making your own means you can eliminate the high fructose corn syrup from your diet, stop eating genetically modified foods, add some fiber and flavor and save a lot of money.

Muesli
Swiss cereal, Muesli Recipe
Serves 8
Ingredients
· 8 Ounces Quick cooking rolled oats
· 5 Cups Milk (or Heavy Cream),
· ½ Cup Powdered sugar.
· 1 Pinch of salt
· 1 Teaspoon Vanilla extract
(When
served this in restaurants we always made it with heavy cream, delicious but
not very diet conscious)
(For variety try almond extract and or a bit of Vietnamese cinnamon)
(Originally Muesli was made with sweetened condensed milk because of the
sanitation concerns with fresh cream. This was first made in the days before pasteurization
and refrigeration was available.)
Instructions Step 1
Stir the oatmeal sugar and cream together on the night before.
Cover with cling wrap and refrigerate overnight. This step is not completely
necessary because modern oatmeal has already been steam processed, nevertheless
soaking this cereal overnight will make a much creamier cereal in the morning.
Instructions, Step 2
In the morning, before serving add fresh fruits and nuts as
desired; choose any or all from this list or add your own favorites.
Berries, blueberries,
blackberries, raspberries
Cantaloupe, peeled and diced
Honeydew, peeled and diced
Strawberries, hulled and sliced
Apples, peeled and grated
Raisins
Dates
Toasted Pecan or Almond pieces
Bananas, peeled and sliced
Coconut flakes
Pears, peeled and grated
Pineapple, peeled and diced
The original Bircher-Benner muesli recipe called for far more fruit than grains. One serving based on the original recipe consists approximately of:
1 tablespoon rolled oats, soaked in 2–3 tablespoons water
1 tablespoon lemon juice
1 tablespoon cream
1 Large apple finely grated and mixed with the above directly before serving
Top with 1 tablespoon ground
hazelnuts or almonds

Grape Nuts Recipe
(12 servings)
- 3 cups graham flour
- 1/4 cup Wheat germ
- 1/4 cup Oat bran
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 cups buttermilk
- 2 teaspoon vanilla extract
- 1 teaspoon salt
Instructions,
Step 1
Preheat oven to 350 degrees.
Lightly grease 12 X 16 inch flat baking pan - using Crisco or other vegetable
oil.
In a large bowl, combine flour, brown sugar, salt, baking soda, and cinnamon --
mixing well.
Add the buttermilk and vanilla and stir well.
Pour into baking pan and spread evenly with a spatula.
Bake for 20-25 minutes or until the batter is firm and the color is
medium-brown.
With a spatula, completely loosen the hot pattie from the pan. Allow to cool
for several hours or overnight.
Instructions Step 2
Preheat oven to 275 degrees F.
Break patty into pieces and pulse in a food processor until coarse crumbs are formed.
If
you don’t have a food processor you can place the pieces in plastic bags and
pound into crumbs with a meat hammer or even a rolling pin.
Divide crumbs between two 12x 16 inch pans.
Bake for 30 minutes, stirring every 10 minutes. Let cool, then store in an
airtight container.
Granola
25 ¾ cup servings
Ingredients 1
· 1-1/2 Cups Water
· 3 teaspoons Vanilla extract
· 1-1/2 teaspoons salt
· 1-1/2 Cups Brown Sugar
· 1/2 Cup Honey
· 1/2 Cup Molasses
· 2 teaspoons cinnamon
Instructions Step 1
Place the water, vanilla, salt, brown sugar, honey, molasses and cinnamon in a sauce pan. Bring to a boil and blend well, remove from the heat as soon as the sugar has dissolved and all ingredients are blended
Ingredients 2
· 10 Cups Rolled Oats
· 1 Cup Raisins
· 1/2 Cup Coconut flakes
· 2 Cups Wheat Germ
· 2 Cups Chopped Dates
· 2 Cups Pecan Pieces, or Almonds, Walnuts etc.
Instructions Step 2
Preheat the oven to 325 degrees
Toss the dry ingredients to blend
Add the seasoned water and stir to blend completely,
Make sure all of the dry ingredients have been moistened
Spread the granola in a thin layer on greased cookie sheets. Or use parchment paper
Do not try to cheat by piling it up,
Use as many cookie sheets as is needed to make thin layers, If needed bake in stages.
Bake until as crispy as you like, 15 minutes or more.
Remove from the oven and cool completely before packing it to store.
Remember for storage at room temperature it will have to be very dry and crisp.
If you prefer the granola to be a bit moist, store it in the freezer, otherwise it will mold quickly.
For variety, add any dried fruits you enjoy but add them after the granola has been baked and cooled. Bananas, pineapple, papayas all work well
Add other good grain flakes to the oatmeal to customize your own cereal
French Toast Soufflé Grand Marnier
Now that you’ve improved the family’s diet and saved all that money by making your own cereals, treat yourselves with this for a nice leisurely weekend brunch:
Serves 8 Decadently Rich
Ingredients
· 1 Loaf French Bread, sliced 1-1/4 in thick
· 4 Large eggs
· 4 Cups Heavy Cream
· 4 Tablespoons Grand Marnier
· 4 Tablespoons powdered sugar
· 2 Tablespoons freshly grated orange zest
Instructions
· Day1 The night before serving this for breakfast:
· Place the sliced bread in a baking pan that just fits, with no overlapping.
· Blend the eggs, cream, liquor, sugar and zest very well.
· Pour the egg mixture evenly over the sliced bread, tilting the pan so everything is soaking.
· Wrap the pan with cling wrap and refrigerate overnight (Or for at least 2 hours)
· Day2, preheat the oven to 400 degrees
· Remove the soaked bread from the soaking pan and place on greased cookie sheets.
· Bake for 10 minutes, turn over and bake an additional 10 minutes
· Test with a pocket thermometer, make sure the internal temperature is at least 165 degrees
· Serve with orange butter and powdered sugar
· Garnish with sliced oranges or mandarin orange segments
· For variety, use a different liqueur, Amaretto with toasted almonds is wonderful

Terrific info and recipes. So I too noticed the packaging changes. What gets me is they are selling less for more money. I have not researched but I wonder if commodity prices have them neutral on earnings or if they are actually making more profit on the higher prices.
I tend to eat very organic and simple. I love the recipes and can't wait to try them (there are variations of 2 of them that I am eating now). Most Commercial food products are filled with corn syrup and genetically modified garbage.

I, like the rest of your readers, seem to find packaged breakfast cereals distasteful, too. I recently tried making trail mix. I used sunflower seeds, oatmeal, slivered almonds, chopped pecans, some honey, brown sugar, maple syrup, vanilla, cinnamon, dried cranberries and some dried apricots. The only two things that I really measured were the oats and the sunflower seeds(used equal amounts). The rest I just estimated. I baked it on parchment paper. I did not use it as trail mix. It was the best cereal I have ever had! It sounds alot like your recipe for granola.
I just ran out and will be making more soon, and since I had no recipe, will be trying yours (reduced amounts, to make less), except the sunflower seeds were awesome so will be using about 4 cups of those instead of wheat germ. Will use about 4 cups of oats, also. Used several cookie sheets and let it get very dry and crispy.
Great minds must think alike! I had no idea what I was doing. Glad to know others are doing this, too. BTW, this was also great with yogurt!

I remember the first time I made this granola for myself, I left it too moist and it turned into a large batch of mold very quickly. Looking at the ingredients in processed food leaves no wonder why we're a diabetic and obese nation of guinea pigs for GMOs.
Best thing about making your own is that you can add what you like to tailor it to your diet. Jillian yours sounds delicious! LRC, the more I learn about our food supply the more I agree with your "simple and organic" diet
